Recipe Friday

The past few days have been very busy and stressful at work, so today couldn't come fast enough! It's also a 3 day weekend thanks to family day on Monday, so that makes me smile :)

On Wednesday night, Mr.D and I made a copy cat salad that you can get at Joey Tomatoes. It's called the viva salad and it's delicious!

-1 teaspoon fresh minced garlic
-1 teaspoon salt (or to taste)
-3 teaspoons Dijon mustard
-3-4 teaspoons honey (or to taste)
-6 tablespoons balsamic vinegar
-1/2 cup olive oil, plus
-2 tablespoons olive oil


1. In a bowl, whisk together garlic, salt, Dijon mustard, honey and balsamic vinegar. Add in olive oil in a slow steady stream until emulsified.

2. Adjust honey amount if you desire a sweeter taste.

3. Chill for a minimum two hours before using.

-dried cranberries
-feta cheese
-chopped green apple
-chicken (we use a roast chicken and then just shred it)

Once the dressing has chilled, add it to the lettuce. Then top with the rest of ingredients.

The salad is so fresh and so tasty!

Tomorrow night, we are going out for dinner with some friends. Then on Saturday morning Mr.D and I are heading to his parent's house until Monday. Our niece had surgery yesterday, so we want to see how she is doing and catch up with friends.
